Resumo


Nowadays biotechnologies one present in all sectors of processing. The value
added and the quality issues are accelerating new patterns of vertical integration.
However, biotechnologies are ambiguously placed within the food system because
of its peculiar characteristics of in industrialization. Important advances in innovation
in this sector therefore are awaiting the results of information manipulation at
the micro level and information management at the eco-systems level.
